Recipe- Summery Orzo Salad

This originally started off as a Rachael Ray 30-minute meals side dish. I got bored one night, decided to make dinner, but I didn't know what I wanted. I had all the stuff to make the side dish, but nothing as an entree... so I figured I'd combine it all into a one pot deal. It's a nice, light, airy type of meal- its not too heavy and it's perfect for a summers evening. I actually prefer it the next day after it's been in the fridge- I think it tastes so much better cold.

Ingredients
1 pound ground chicken
1 tbsp Mrs. Dash Italian Blend
1 small zucchini, julienne cut
1 small yellow squash, julienne cut
1/2 pound orzo
Salt
2 tablespoons butter
1 cup feta cheese crumbles
A handful of parsley leaves, chopped
1/2 pint grape tomatoes, halved
Freshly ground black pepper

Directions
Brown the ground chicken in a large skillet over medium high heat with the Mrs. Dash seasoning. Once the chicken's browned, add in the zuchinni and squash and cook until tender. Drain off any excess water or fat and set aside.

Heat water in large sauce pot to boil and add pasta, cook to al dente.

Melt butter in the pot while still hot and combine with feta. Add cooked pasta to feta butter and toss with parsley, tomatoes, & chicken mix, then season with a little salt & pepper to taste.
